Vegetable Beef Soup Recipe from:  Boulder Locavore Prep Time: 10 minutes Cook Time: 30 minutes Total Time: 40 minutes Servings: 8 Calories: 151.7kcal Ingredients 1 tablespoon olive oil 1 teaspoon minced garlic more or less to taste 1 small onion chopped 1 pound lean ground beef 3 10.75-ounce cans Condensed tomato soup 2 14.5-ounce cans Diced tomatoes 1 16-ounce bag frozen Mixed Vegetables 3-4 medium Potatoes peeled and cut into small pieces 2 cups water or beef stock Salt and pepper to taste Instructions Instant Pot instructions Select the “sauté” function and add the olive oil. Add in garlic and onion and sauté until garlic is fragrant and the onions are soft and translucent, about 2-3 minutes. Add in ground beef. Stir constantly, breaking into small pieces, until cooked all the way through and brown. Strain any extra fat from the beef and discard. Crockpot Chicken Parmesan Soup

Crockpot Chicken Parmesan Soup Recipe found:  Andrea on Facebook In your crockpot add: 2-3 pounds chicken cubed(if you would rather shred your chicken when finished cooking there’s no need to cube)  1 can crushed tomatoes 28oz  1 can tomato sauce  28oz  4-5 cups chicken broth (4 if you’d like it a bit thicker)  Season with a 1.5 TBSP of Italian seasonings  2 tsp red pepper flakes  Salt and pepper 1/2 an onion chopped  2 TBSP minced garlic  Cook on high 3-4 hours and then shred chicken Then add: 2 cups heavy whipping cream 1 cup shredded Parmesan  1 cups shredded mozzarella  Cook another 15 minutes  Add 1 pound cooked noodles  Enjoy topped with extra shredded Parmesan and croutons!!

Nacho Spaghetti

Nacho Spaghetti Recipe found:  Andrea on Facebook Ingredients  1-1 1/2 pound ground beef 1 can fiesta cheese soup Around a cup of whipping cream 1 can rotel 2 cups shredded Mexican blend cheese Packet of Taco seasoning  1/2 an onion diced  1 jalapeno (optional) 16 oz of spaghetti noodles cooked Cook ground beef with your diced onion. Add your taco seasoning per packet directions. Lower heat. Add fiesta cheese soup, then fill up that same can with whipping cream and add it in too. Add rotel, and jalapeno chopped. Let cook for a minute or two while stirring. Add 1 cup of shredded Mexican blend cheese. Wait 5-10 minutes until cheese melts completely and it’s no longer stringy.  Add cooked spaghetti noodles to your sauce. Mix well. Top with another 1/2-1 cup of Mexican blend cheese to the top and cover until melted.
