Crockpot Chicken Parmesan Soup

In your crockpot add:

  • 2-3 pounds chicken cubed(if you would rather shred your chicken when finished cooking there’s no need to cube) 
  • 1 can crushed tomatoes 28oz 
  • 1 can tomato sauce  28oz 
  • 4-5 cups chicken broth (4 if you’d like it a bit thicker) 
  • Season with a 1.5 TBSP of Italian seasonings 
  • 2 tsp red pepper flakes 
  • Salt and pepper
  • 1/2 an onion chopped 
  • 2 TBSP minced garlic 

Cook on high 3-4 hours and then shred chicken

Then add:

  • 2 cups heavy whipping cream
  • 1 cup shredded Parmesan 
  • 1 cups shredded mozzarella 

Cook another 15 minutes 

Add 1 pound cooked noodles 

Enjoy topped with extra shredded Parmesan and croutons!!
